Coffee Cake Muffin Recipe

Ingredients:

  • 1 cup flour;
  • baking powder (around 1 teaspoon);
  • baking soda (around ¼ teaspoon);
  • ½ teaspoon salt;
  • 6 tablespoons (85 grams) unsalted butter;
  • ¾ cup (150 grams) granulated sugar;
  • 2 eggs;
  • vanilla extract (around 1 teaspoon);
  • ½ cup (120 ml) sour cream or yogurt, at room temperature.

Instructions:

  1. Preheat the oven to 375°F (190°C). Place paper liners in all 12 cups of a muffin tin.
  2. Whisk together the flour, baking powder, baking soda and salt. Set this mixture to the side for now.
  3. In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. Then add the vanilla extract and sour cream. Gradually add in the dry ingredients and mix just until combined.
  4. Divide the batter evenly among the prepared muffin cups. Sprinkle with the crumb topping mixture (see below), pressing lightly into the batter.
